IASA Anchovies in Olive Oil

These fishies are ready for their close-up! Some people warned us not to use close-up pictures of anchovies on our site, but we politely disagree. IASA anchovies are a bright pink hue, unlike most tinned or jarred anchovies on the market that often skew brown or grey. They are salty and meaty, with a touch of sweetness. Dubbed "Prosciutto di Mare," or "Prosciutto of the Sea," by its maker, IASA.

Made from anchovies caught off the Amalfi Coast and cured for 12 months in oak barrels.

The production of these beautifully preserved fish is led by women, who delicately hand-pack the cured fish into glass bottles topped with olive oil. The resulting oil is perfect for adding a touch of anchovy flavor during cooking, but save the fish for eating as-is, like a slice of good prosciutto on top of bread.
