Caravaglio Salted Capers

These capers are like adding sparkling little jewels to a dish. Briny and floral, with an ocean-like salinity.

Made from capers grown on the island of Salina.

Caravaglio prepares these using a beautifully manual process: capers are picked by hand and sun-dried before undergoing a 10-day lacto-ferment in salt. Then they're rinsed, re-salted, and aged for 2 months.
